Vegetable sausages, burgers and nuggets are getting better and better and more popular. The ETH canteen cooks with a meat substitute that tastes confusingly similar to chicken meat and is popular with customers.

It hisses and steams out of the wok, the hungry in the queue get seductive scents in their noses. The canteen on the ETH Poly Terrace in Zurich is always busy at midday. Chef Supranee Geisseler prepares a piecework Asian dish in portions: fried vegetables in a creamy curry sauce, optionally with duck meat or so-called Planted chicken. The latter is a new product that looks and tastes very similar to chicken, but is made from purely vegetable ingredients.
